Ingredients
1 large ripe banana
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk (or any desired non-diary milk of one’s choice).
1 large egg
2 tablespoons of olive oil and additional for sautéing.
Optional: a pinch of cinnamon added to enhance the taste
Instructions
Take a mixing bowl and mix the banana until you get a paste.
Stir in the flour, sugar, baking powder, salt and cinnamon if used, into the mashed bananas till it is well mixed.
In another bowl, combine the milk, egg, and olive oil.
Add all the wet ingredients to the dry and stir until the batter is only mixed for about 15 seconds. It is not necessary to mix until there is no lumps at all – some are acceptable.
Scatter a little olive oil in a non-stick skillet or griddle and preferably heat it on a medium flame.
With a spoon pour approximately 1/4 cup of the batter for each pancake on the skillet.
about 2-3 minutes of boiling after it bubbles on top, flip over and cook until it turns slightly brown on the other side, it will take about 2-3 minutes.
Do the same with the remaining batter placing more olive oil in the skillet in case it is needed.
It should be eaten warm and it can be accompanied by your best toppings including syrup or honey and fruits.
