Ingredients:

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • Salt & black pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • Optional: fresh rosemary or thyme for garnishing

For the Garlic Mashed Potatoes:

  • 4 large potatoes, washed and cubed
  • 4 tablespoons butter
  • 1/4 cup heavy cream or milk
  • 2 garlic cloves, minced
  • Salt and black pepper to taste

For the Roasted Brussels Sprouts:

  • 2 cups Brussels sprouts, sliced in half
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions:

Prepare the Mashed Potatoes:
Chop the potatoes into desired sizes, place them in a pot with lightly salted water, and heat until the potatoes soften (about 15-20 minutes). Drain and mash them with butter, heavy cream, garlic, salt, and pepper. Keep warm.

Roast the Brussels Sprouts:
Preheat your oven to 400°F (200°C). Drizzle the Brussels sprouts with olive oil, sprinkle with salt, pepper, and a pinch of red pepper flakes. Spread them on a baking sheet and roast for 20-25 minutes, flipping halfway through until they become crispy and golden brown.

Cook the Steaks:
Season the cooled steaks with salt and pepper. Heat a frying pan over medium heat, add olive oil, and grill the steaks for 3-4 minutes on one side for medium-rare. Flip and cook to your desired doneness. Remove from the skillet and let them rest.

Make the Balsamic Glaze:
In the same skillet used for cooking the steaks, add balsamic vinegar, honey, minced garlic, and Dijon mustard. Stir and cook for 3-4 minutes until the glaze thickens slightly.
